Gin Eva - Unique Spirits from Mallorca
Artisan Spirits Limoncello de Mallorca 29% vol. - A small uniquely created, but steadily growing collection of spirits and liqueurs.
Well-crafted limoncello is the king of liqueurs and tastes like summer and vacation. In fact, good limoncello is very complex to make, so much so that it should actually be quite expensive. This is also one of the reasons why homemade limoncello tastes best. If the industry had to finely peel all the lemons needed for the mass production of limoncello, it would be significantly more expensive. Colorants and clouding emulsions are cheaper.
The Eva distillery has been experimenting with limoncello for several years, producing small batches of approximately 250 bottles per batch. The creamy cloudiness is particularly challenging. Only the exact right amount of essential oils from the lemon peel leads to a stable emulsion.
For production, only untreated fruits from the S1ller valley are used, preferably when they are still slightly green. Approximately 4 kg of lemons are peeled per liter.

Eva & Stefan both hold degrees in winemaking and have been working for more than 10 years for various wineries, mainly in Mallorca, but also in Germany, Catalonia, and California. In 2010 - before the big gin hype began, they distilled their first batch of gin for a winery they worked for and enjoyed it so much that they decided to open their own distillery. They launched GinEva in 2012 - a regional craft gin focusing on local ingredients from Mallorca, such as fresh citrus fruits and juniper.
"Eva and I enjoy the freedom to create spirits; it is like being a chef and having an instant result, quite different from growing grapes and then producing wine!
We love good drinks and food and enjoy visiting cocktail bars. Our favorite cocktails are sours, but nothing can beat a martini, preferably with sherry instead of vermouth." Besides juniper alcohol, they distilled cocoa beans, hazelnuts, all sorts of citrus fruits, anise, fennel, olives, carob, wild herbs, and spices, and much more. "Some distillates we created were remarkable, some strange, and others will never see the light of day."
The number of experimental distillates steadily grew, and in 2017 they decided to bottle their favorites as ARTISAN. SPIRITS by Eva Maier G3mez & Stefan Winterling. A small, uniquely created, but steadily growing collection of spirits and liqueurs.
