Ecological Heart of Production
On 14 hectares of cultivation, the olive trees at Bodega Biniagual thrive in their most productive phase. Fully managed according to organic principles, no synthetic pesticides or fertilizers are used. Instead, Biniagual relies on composting, organic fertilization, mechanical weed control, and the promotion of biodiversity through beneficial habitats. This approach not only ensures sustainability but also creates the distinctive, unmistakable aroma of their oils.
Selection of Olive Varieties
The Bodega focuses on the Arbequina and Picual varieties:
- Arbequina produces an especially mild, fruity oil with notes of green almonds, artichokes, and fresh herbs. It is versatile in the kitchen and distinguished by its gentle spiciness.
- At Biniagual, Picual olives are used exclusively for table olives. The larger fruits stand out with a robust, slightly bitter flavor, which is refined through various curing methods.
