For this wine with strictly limited production, we select the best grapes of the native Manto Negro variety from our vineyard. Harvesting is done, as with all our wines, by hand in boxes with a capacity of 12 kg. After a second hand-selection in the winery, alcoholic and malolactic fermentation takes place separately in different formats (wooden tank, inox tank, and 500-liter barrels). Like all wines from Bodega Biniagual, the Mantonegro is made exclusively with grapes from our own vineyards, which surround the winery and the village of Biniagual. The Manto-Negro grapes come from a 12-hectare plot traditionally known as “Ca’n Cotorra,” located 140 meters above sea level at the northern latitude. The soil is called Cap Vermell, it is calcareous and clayey with many stones on the surface and retains little water.
Allergen Notice: Contains sulfites
