For this wine with strictly limited production, we select the best grapes of the native Manto Negro variety from our vineyard. Harvesting is done by hand in 12 kg capacity boxes. After a second hand selection in the winery, alcoholic and malolactic fermentation takes place separately in different formats (wood vat, stainless steel tank, and 500-liter barriques). Like all the wines from Bodega Biniagual, the Mantonegro is made exclusively from grapes grown in our own vineyards surrounding the winery and the village of Biniagual. The Manto-Negro grapes come from a 12-hectare plot traditionally known as "Ca’n Cotorra," located 140 meters above sea level on the northern latitude. The soil is known as Cap Vermell, lime and clay-rich with many stones on the surface and low water retention.
Allergen notice: contains sulfites
