José Luis Ferrer Winery – Mallorcan Winemaking Tradition Since 1931

Located in the heart of the D.O. Binissalem wine region in Mallorca, José Luis Ferrer Winery has been producing authentic Mallorcan wines since 1931. Combining tradition, innovation, and sustainable viticulture, this family-owned estate cultivates around 130 hectares of vineyards. The winery produces a diverse range of red, white, rosé, and sparkling wines made from both indigenous Mallorcan and international grape varieties, with most vineyards managed according to organic farming practices.

One of Mallorca's Most Influential Wineries

With an annual production of over 800,000 bottles and more than 30 wines, José Luis Ferrer is one of Mallorca's leading wineries. The portfolio ranges from fresh, fruit-forward wines to complex Crianza and Reserva wines with great ageing potential. A key characteristic of the winery is the combination of tradition and modern cellar technology. Parts of the winery date back to the 1930s and are still in use today. Historic concrete and masonry tanks provide particularly harmonious fermentation, especially for the red wines, while white and rosé wines are fermented in temperature-controlled stainless steel tanks to preserve their freshness and fruitiness. The vineyards extend around Binissalem and are largely family-owned – a decisive factor in ensuring the consistently high quality of the grapes. Typical Mallorcan grape varieties such as Manto Negro, Callet, Moll (Prensal Blanc), and Giró Ros are cultivated alongside international classics such as Cabernet Sauvignon, Merlot, Syrah, and Chardonnay.

The winery pursues a consistently sustainable approach:

  • Around 80% organic viticulture
  • Use of solar energy for sustainable production
  • Selective grape harvesting for the highest quality
  • Combination of traditional fermentation methods and modern technology
  • Ageing in stainless steel tanks as well as French and American oak barrels
  • Extended ageing periods for complex, structured wines

Two wines are particularly representative of the winemaking style of José Luis Ferrer Winery.

Crianza José Luis Ferrer – "The Deep One"

The Crianza José Luis Ferrer is a classic red wine from Mallorca and a prime example of the winery's winemaking style. This blend of Manto Negro, Cabernet Sauvignon, and Syrah is aged for 12 months in American and French oak barrels, followed by more than 24 months of bottle ageing. In the glass, it displays an intense red colour with violet reflections. On the nose, aromas of ripe forest berries unfold, accompanied by spicy, balsamic, and lightly toasted notes. On the palate, the wine impresses with its structure, balance, and soft tannins. The long, harmonious finish highlights its elegant Mediterranean character. A versatile Mallorcan red wine, ideal with meat dishes and aged cheeses.

Blanc de Blancs – "The Island Classic"

The Blanc de Blancs is one of Mallorca's best-known white wines and represents the winery's fresh, elegant style. The blend of Moll (Prensal Blanc) and Chardonnay combines regional identity with international finesse. In the glass, it displays a clear yellow colour with greenish reflections. On the nose, aromas of white fruits and citrus dominate, complemented by delicate floral and herbal nuances. On the palate, the wine is fresh, well-balanced, and pleasantly creamy thanks to ageing on the fine lees. Its lively acidity provides structure and a long, harmonious finish. An ideal companion to fish, seafood, and Mediterranean cuisine.
