PRODUCTION
After de-stemming, pre-fermentative maceration begins, lasting around 5 days. This is a controlled fermentation where the must is pumped over daily, and from halfway through fermentation, the "Délestage" technique is applied. Once fermentation is completed, we move on to post-fermentative maceration, which lasts about 15 days.
As the name suggests, this is a selection from the best Ses Nines red wine barrels. The notation 07/09 indicates that this is the first harvest delivered to the winery in September 2007.
A total of 6,400 bottles of 75 cl were produced.
