Biniagual

Extra Virgin Olive Oil
Extra Virgin Olive Oil

Biniagual presents its own olive oil with the designation of origin Olive Oil from Mallorca. The Oli Finca Biniagual is produced in small quantities and comes from the estate's own olive plantation. It is characterized by its extremely low acidity of only 0.2%, its fresh fruity taste, and its shiny yellow-green color. In Biniagual, there are several centuries-old olive trees, but the oil comes from younger plantings of the Arbequina variety. Depending on the climate, the olives are hand-harvested between mid-October and mid-November. The olives are placed in small boxes of 15 kilos each and are taken directly to the Son Catiu oil mill, about 10 kilometers from Biniagual, where they are cold-pressed on the same day. Immediate pressing after hand harvesting helps keep the acidity at a very low level. The requirements of the designation of origin DO Oli de Mallorca allow an acidity of up to 0.8%, but Oli Finca Biniagual has only 0.2% acidity.
The climatic conditions in Biniagual are very favorable for olive cultivation, and the estate-owned sheep herd provides natural weed control and fertilization. Overall, ecological balance in Biniagual is very important, whether it be for olives, wine, or other agricultural products.
