The flagship wine of the Bodega is also one of the best wines not only of Mallorca!
The grapes come from the oldest vines of the Bodega (Mantonegro over 60 years and Syrah at least 12 years old). The wine is only made in vintages that allow us to create a Mantonegro with great depth and complexity. This requires the year before the harvest to have cold winters, mild summers, and well-distributed rainfall, so that phenolic ripeness is reached slower and the concentration of polyphenols and anthocyanins increases without over-ripening.
The selection of grapes begins in the vineyard, where a strict screening process is applied, with only the best grapes being hand-picked for this wine. Upon arrival at the winery, another selection takes place, the least ripe grapes are scrutinized, as well as those that do not meet the quality criteria.
