For this wine with strictly limited production, we choose the best grapes of the indigenous Manto Negro variety from our vineyard. Harvesting is done, as with all our wines, by hand in boxes with a capacity of 12 kg. After a second hand selection in the winery, the alcoholic and malolactic fermentation take place separately in different formats (wooden tank, stainless steel tank, and 500-liter barrels). Like all wines from Bodega Biniagual, Mantonegro is made exclusively with grapes from our own vineyards surrounding the winery and the village of Biniagual. The Manto-Negro grapes are sourced from a 12-hectare plot traditionally known as 'Ca’n Cotorra', located 140 meters above sea level at a northern latitude. The soil is called Cap Vermell, which is lime and clay-rich with many stones on the surface and retains little water.
Allergen Note: contains sulfites
