Capers

The caper is neither a fruit nor a seed, but the bud of a plant known on the island as Taparera. Its scientific name is Capparis spinosa and it belongs to the genus of shrubs with multiple annual cycles, which dry out in winter and survive only as deep roots with almost no branches. Harvesting them has always been one of the hardest fieldworks in Mallorca. The plant is shrubby, and the capers lie close to the ground, so they must be picked during the hot season from June to September in a bent-over posture.

Traditionally, this was women's work, carried out at dawn when commencing the day’s labor. Early in the morning, the buds are still firm from the night's coolness, reducing the likelihood of pricking oneself on the thorns surrounding the leaves.
